Before moving to the Midwest, she lived in Dallas while working as Branch Manager for a food rescue non-profit, Rescuing Leftover Cuisine. She founded the branch shortly before the pandemic that has since led to recovering over 100,000 pounds of surplus food to pantries.
Prior to that, Mimi was a Product Designer for three years at global technology company, Sabre Corporation. She guided design on several key features and a massive effort .
Prior to that, she worked with FoodSource DFW, an innovative food rescue organization, crafting every visual aspect of their brand from scratch.
